BAKING AND PASTRY ARTS
The purpose of the Baking and Pastry Arts course is to provide students with an overview of baking and pastry arts within the food service industry while providing hands-on participation in food preparation. Students will be exposed to four broad themes: safety and sanitation, employment opportunities, and requirements, purchasing and cost analysis as well as baking and pastry food preparation skills.
CAREERS WITH CHILDREN (ROP)
This two period block, off campus experience, course is designed for the student who is interested in the growth and development of children as well as a career in working with children. The first quarter will cover an introduction on how to understand and relate to children as well as competencies needed to work with children. Then, the students will be placed in community field sites of their choice including infant/toddler centers, family daycares, preschools and elementary schools Monday-Thursday. Each quarter the student will have one full day experience at their field site. On Fridays, students will check in with time sheets and be involved in various lessons. Upon satisfactory completion of this course, students will receive an ROP certificate.
This class is articulated with Cuesta College, meaning that a student can receive Cuesta credit through an examination process.
Note: District transportation is NOT provided.
Prerequisite: Child Development is recommended, but not required course to take before this class.
CHILD DEVELOPMENT/LITTLE HOUNDS PRESCHOOL
This year long course is designed for the students who are interested in the growth and development of children as well as a career in working with children. There will be hands on experience in working with young children at the on-campus Little Hounds Preschool. It is a recommended, but not required, course for the Teaching Careers/ Careers with Children classes. The emotional, physical, social, and intellectual development of children from the prenatal stage through elementary age will be studied. All of the responsibilities of parenthood, including an optional computer baby project, will be covered in this course.
HOSPITALITY 1
The purpose of the Hospitality 1 course is to provide students with an overview of the Hospitality and Food Service Industry, while providing hands-on application of basic to advanced level skills in food preparation in a commercial kitchen classroom setting. Units include food service operations including facilities, equipment, food purchasing and costing, health safety and sanitation regulations and practices, nutrition, skills in food preparation, planning, presentation and service. Focus is placed on further development of attitudes, skills and competencies for entry level employment, career success and/or further post secondary education, or training in the field of culinary arts.
HOSPITALITY 2
The purpose of the Hospitality 2 course is to provide students with an advanced perspective of the Hospitality and Food Service Industry and baking, while providing hands-on application of basic to advanced level skills in food preparation in a commercial kitchen classroom setting. Units include food service operations including facilities, equipment, food purchasing and costing, health safety and sanitation regulations and practices, nutrition, skills in food preparation, planning, presentation and service. Focus is placed on further development of attitudes, skills and competencies for entry level employment, career success and/or further post secondary education, or training in the field of culinary arts. Prerequisite: Hospitality and Food Service.
TEACHER TRAINING (Teaching Careers) (ROP)
This one period year long off-campus course will prepare students for a rewarding, challenging, and fulfilling career in teaching and related fields in education. In joining this class, students will have made a commitment to the children, teachers, and parents of his/her infant/toddler center, family day care, preschool, or elementary school assignment. Under the supervision and guidance of professional personnel, students will be given opportunities to work with infant through elementary age children in a classroom/day care setting of their choice. Students will receive the required 90 hours of classroom instruction, training, and community experience. Upon satisfactory completion of this course, students will receive an ROP certificate.
